Spice Blends
Throughout the world, human beings have always created spice blends for use in cooking. Spices are rarely used individually in a dish, except in the case of pepper.
In keeping with the maritime history of Saint-Malo, Olivier Roellinger designs spice blends with a French touch; they are his creations.
Creating a new spice blend is like a game of building blocks. It can be closely bound up with a fantastical seafaring adventure, a little story, a memory, an emotion, or very often an encounter.
The spice blends are created with specific uses in mind: starters and vegetables, fish and shellfish, meat, desserts and fruit. However, these are merely suggestions. The spice blends are for you to play around with in your kitchen and use according to your tastes and your whims.
