Ingredients: Lemongrass, coriander, black cardamom, salt, spices.
Use to season fish and vegetable bouillons. (1 teaspoon per 1/2 liter or 2 cups water)

Recommendations

To prepare a divine vegetable or shellfish bouillon, combine a heaping teaspoon with 1/2 liter (2 cups) water, a squeeze of lime juice and a few cilantro (fresh coriander) and mint leaves.
Bring to a simmer, then steep 15 minutes.
Fill out the bouillon with steamed young vegetables, a handful of shellfish, small fish fillets, some rice noodles and/or a few slices of cooked potato.

Lemongrass and black cardamom play off one another for flavors that are both fresh and full-bodied.

I was enthralled by the purity of the soups served in Hanoï, where the health-giving, joy-briging bouillons are enjoyed as street food. They restore energy and serenity, and their simplicity, brightness, clarity, and depth of flavor give them a thoroughly modern feel.
I created Tonkin Powder as a tribute to these soups that vary from bend to bend along the Mekong. It summons the magic of pho soup would to reveal the delicious wonders of our cliffsides and coastlines.
