The words of Olivier Roellinger

The recipe for this powder came to me in the early morning as I stood at the Cochin port, this Indian eye that has looked towards the West since the 4th century.
I imagined this powder to combine it with dairy products such as yoghurt, fromage blanc or crème fraîche, to pay tribute in my own way to this great meeting between India and our cuisine.


Add it to fromage blanc or yoghurt, for a salad of vegetables or marinated fish.
Dairy products have the ability to capture the heady aromas of the world’s best spices and their history — scallops for example, but also spinach with these fragrant spices make an equally successful match.
