The words of Olivier Roellinger

This powder was one of my first creations, inspired by the maritime route that links the Indian Ocean to the desert all the way to Alexandria in the Middle Ages. It brings together spices from the Middle East and the Far East.
Cumin and sesame dominate and mingle with the sweetness and depth of mace and cinnamon. An outsider is the chilli pepper niora, which was introduced later to the New World.


This powder makes a good match for lamb but fishes such as red mullet or mackerel will work too. In the summer, it works magic with slow-cooked vegetables.
