This blend pays tribute to the Acadians who had to reinvent their cuisine upon settling in Louisiana at the end of the eighteenth century and is a signature product of the Louisiana cuisine, which also incorporates Creole influences. This spice blend made of chili pepper, pepper, garlic and dried herbs is easily used with marinades, barbecues, or casseroles with no need for added salt or pepper.
Add oil, lemon juice, brown sugar, and possibly also sherry vinegar or soy sauce, to the blend and then sprinkle on meat before grilling, griddling, or roasting. The Cajun spice blend can also be dry-rubbed or sprinkled on the meat.
