Poudre des Bulgares® (Bulgarian blend)

Ingredients: Palmyra palm flower sugar, *sesame seeds, vanilla, flaxseeds, saffron, spices.
Use to flavor and sweeten yogurt.

Lightly sweetened with Cambodian palmyra palm flower sugar and flavored with Madagascar and Papua New Guinea vanilla beans and a hint of saffron. A few toasted sesame and flax seeds add a nutty note while a rosebud rounds the blend out with a wholly feminine touch.

Each jar or packet contains a single rosebud that continues to lend its scent to the spice blend. When the container is empty, add the bud to a jar of pure cane sugar. That way, none of its delicious fragrance goes to waste.

When I was a teenager, I had the good fortune to be able to explore Hungary, Bulgaria and the Balkan countries on a moped. The culinary heritage I discovered there was a blend of both eastern and western influences. I still remember the unique flavor of the fermented dairy products I tasted. Poudre des Bulgares® was created as an homage to these cultures which have been defined and enhanced by both East and West. I love the silken consistency of yogurt when you first plunge a spoon into its creamy thickness, but otherwise, I find yogurt to be a little sad.
In developing this blend, my focus was on the first taste I would like to have in my mouth at breakfast time. The flavors should awaken me with a gentleness similar to the caress a mother uses to wake up her small child. After five years of research, I think I’ve found a way to embody this everyday, magical, and intensely personal moment, when we all awake to life in the protective shadow of a mother’s love.
