I created this blend at the home of Gobin, my student and accomplice, on Mauritius Island. It was inspired by his aunts, who grind their own spices to come up with divine blends. When Poudre d’Or encounters shellfish from Brittany, it balances out the chill of the Breton seas. "Poudre d'or" is the name of a beach in Mauritius.
Saffron lends a delicate finesse.
