This traditional mix used in Creole cuisine is delicious in a wide variety of Caribbean dishes: fish, meat, and vegetables alike. Each island from the Caribbean Ocean to the Indian Ocean has its own style of Colombo powder. It is essentially a mix of chili pepper, turmeric, coriander seed, and mustard seed.
