This spice mix was used on all 17th-century ships, probably to liven up everyday fare. Made of chilli pepper, mustard seed, cumin and thyme, it should be mixed with breadcrumbs and sprinkled on scallops or white fish fillets that you can brown in butter or olive oil.
It’s a spice mix for freedom-loving pirates!


This preparation is ideal for scallops or any other bite-sized pieces of white fish. Use an equal quantity with breadcrumbs when browning fish fillets and scallops. For a sauce, I suggest a few drops of oil , like our nioura oil or a good olive oil.
