This blend was one of my very first spice creations; its composition has long been a well-guarded secret.
The blend is used to enhance the flavors in pain d’épices (French gingerbread) and apple pie.
Pain d’épices blend can also be added to veal or poultry as a finishing spice. It is also a wonderful addition to foie gras.
