Beena Paradin and I like to use this whole spice blend on winter vegetables that often need a hint of sunshine and warmth.
Toast ½ teaspoon of Panch Phoron per person in a dry skillet or with oil or ghee, then add to vegetable dishes (steamed, boiled, or roasted) just before serving.

Story

In Hindi, panch means ‘five’ and ‘phoron’ means ‘spices’ and this blend is also called Bengali Five-Spice Blend. The combination of fenugreek, fennel, brown mustard seeds, cumin, and nigella seeds plays off the flavor contrasts between bitter fenugreek and the sweet licorice element in fennel.
