While roses are an essential flower in gardens, both for their captivating fragrance and vibrant color, they are less common in cooking.

I consider rose as a spice: its petals perfume and season dishes. Rose brings a touch of sophistication to savory dishes and delicate desserts made with milk and/or red fruits.
I enjoy rose as an evening infusion (½ tsp per cup).
My brother Hugo, in his restaurant Le Coquillage, makes extensive use of rose, infusing it in vinegar to capture the flower’s floral and briny flavor notes.

Story

Queen of flowers, the rose is a symbol of love. The fascination it inspires comes from its dual nature: a perfect beauty with a velvety touch, yet a prickly beauty with its sturdy thorns.
Rose can be found in elaborate spice blends, such as ras el hanout and advieh. It is also one of the ingredients in our Harissa Powder.
