Who we are?

The Roellinger family is a family of “artisans” restaurateurs, hoteliers, and grocers, who love their Breton homeland and are passionate about gastronomy and the art of living. In 1982, Jane and Olivier Roellinger opened their first restaurant, “Le Bricourt”, in their family home in Cancale. In 2008, it became the first and only 3-star restaurant in Brittany.


Olivier Roellinger recounted the story of the maritime adventure of the Malouins Corsairs who roamed the seas in search of the finest spices, creating unique spice blends for his restaurant.
At the end of the meal, customers always asked to leave with a sample of the blends, and thus Epices Roellinger was born.


Founded in 1982 and directed today by Mathilde Roellinger, “Epices Roellinger” collects the finest spices in the world, creates and sells spice blends and raw spices in its warehouse stores. Located in Cancale, Saint-Malo, and Paris, our sales experts take the time to provide advice and tips to help everyone use spices more easily. In Cancale, at the Maison du Voyageur, the cooks prepare the spices compositions imagined by the Roellinger family. The order preparers carefully package our spice blends, rare peppers, and raw spices.
In parallel, wishing to share a unique experience with their customers, the Roellinger family’s activities diversified by adding hospitality to their first restaurant business and spices, thus becoming “Les Maisons de Bricourt”.


Today, Les Maisons de Bricourt includes four hotels (Le Château Richeux (mettre sigle Relais & Châteaux), la Ferme du Vent, le Petit hotel Les Rimains and les Gîtes Marins), two restaurants (le Coquillage (mettre les étoiles) and le Bistrot de Cancale), as well as a wellness area.
Together, Hugo and Marine Roellinger manage Les Maisons de Bricourt, surrounded by the dining room’s actors and actresses, receptionists, cooks, pastry chefs, dishwashers, housekeepers, laundresses, and gardeners.
