Recommendations

Hot infusion :
Place ½ teaspoon per cup in a teapot.
Pour over boiling water. Infuse for 7 minutes.

Room-temperature infusion :
In a 1-litre carafe, add 4 teaspoons of Quart de Nuit to the water.
Infuse for 3 hours. Filter.

Story

In June 2024, Hugo Roellinger and Armel Le Cléac’h crossed the Atlantic Ocean aboard an Ultim trimaran, to carry the Olympic flame to Guadeloupe. Since this historical adventure, a special link has grown between the chef and the sailor, both deeply in love with the oceans.

In November 2026, Armel set off from Saint-Malo on the Route du Rhum, heading for Guadeloupe. The starting line is close to
Le Coquillage, Hugo’s restaurant, and to the kitchen laboratory in Cancale, where spice blends and infusions are handcrafted.


To accompany his friend on this legendary solo sailing race, Hugo has created "Quart de Nuit", an aromatic union between Brittany and the Carribean Islands.
This infusion is a tribute to the sea and to the sailors. It tastes of the wind, carrying fragrances from distant shores, with the gaze fixed on the horizon.
