This unique, vanilla planifolia can be enjoyed in warm milk, semolina pudding, and in traditional custard dishes.
When high-quality vanilla beans like these, less of the bean is needed to flavor recipes. 1/3 of a vanilla bean is enough for a dessert that serves 4 to 6 people.
To use : split the bean in half lengthwise with a small, sharp knife. Use the back of the knife to scrape out the tiny seeds inside each half of the bean, then add the seeds to the recipe as directed.

On São Tomé Island, Juliette and Francesco have brought together 35 producers who grow vanilla in their forest gardens, using agroforestry and biodiversity principles. The vanilla planifolia (Vanilla fragrans) trees flourish on volcanic soil at an altitude of 400 meters and the vanilla is purchased from the growers when is it green. Juliette and Francesco prepare and refine the vanilla pods to ensure we are given the best quality.

The result is vanilla with a cocoa nib, red berry, and a hint of violet fragrance.

Story

A young Franco-Italian couple set themselves the challenge of revitalizing the vanilla history, together with local producers, on an island they fell in love with: São Tomé.

The São Tomé and Príncipe archipelago is in the Gulf of Guinea, 200 km off the coast of Gabon and Equatorial Guinea. The vanilla industry ground to a halt in the 2010s.

The archipelago is renowned for its cocoa and coffee production and biodiversity conservation.
