Use 3 saffron threads per serving. The threads should be steeped in 2 tablespoons warm water the night before, then added to a dish or sauce 30 minutes before the end of the cooking time.

We work with Azafranes Jiloca, a small family-run company to procure our Spanish saffron. In 1995, the Plumet family launched a campaign to continue the production of saffron in the Aragon region of Spain. Up until then, the saffron market in the region had fallen sharply because it was no longer economically viable. This high-quality saffron is evidence that their venture has been a stunning success. It is safran in organic farming.
