Olivier Rœllinger's words

This astonishing pepper cousin from Sumatra in Indonesia is similar to Szechuan peppercorns with kaffir lime flavor notes.

It goes magnificently well with fish and white meat. Simply crush a few grains then sprinkle them over the prepared dish.

Story

Andaliman pepper (Zanthocylum acanthopodium) is a wild pepper that grows in northern Sumatra. It is gathered from the heart of the tropical rainforest in June and November using methods that do not damage the trees. The berries are dried in the sun, then sorted by hand.
