Olivier Rœllinger's words

Cubeb or tailed pepper is a hot, camphorous spice with a hint of bitterness and we recommend you try it if you like milder pepper. I use it in several of my spice blends.

Story

Cubeb or tailed pepper is native to Indonesia and was introduced to Europe in the 16th century by Arab traders. Recipes that call for tailed pepper date back to this time. Up until the end of the 17th century, it was sold as a type of peppercorn until Portuguese spice traders forbade its sale to promote true peppercorns.

Tailed pepper was overlooked for many years, but has made a glorious return to world cuisines. Tailed pepper is an important component in ras el hanout, a sophisticated spice blend from North Africa.

We source our tailed pepper from a 5-grower cooperative in Java. The tailed pepper is harvested by hand in July, then dried in the sun.
