Elderberry flower gives off a scent of rosewater, late harvests and lychees. The flowers should be picked during a hot afternoon. They have such a brief life that they must be picked quickly. We have succeeded in capturing their fragrance in a neutral grapeseed oil. This oil brings a lingering flavour and a surprising finesse and elegance to compositions. This recipe recreates the smoothness and sweetness of a hollandaise sauce with neither egg yolk nor butter. You’ll want to eat it with a spoon!
