This oil’s magical fragrance and flavors are like something out of the Arabian Nights, redolent with Andalusian scents and flavors—you could almost imagine finding it within Aladdin’s lamp. The idea for a citrus oil first came to me 20 years ago, while I was gently sautéing langoustine tails in a pan of salted butter while cooking at the Maison du Voyageur.


Huile et agrumes is infused with zests from oranges and lemons sourced in Corsica, the Island of Beauty. It can be used to season all types of seafood, as well as vegetables. Add it along with a drizzle of lemon juice as a finishing touch on a fish fillet, seared scallops, or freshly grated raw carrots. It is also delicious on white or green asparagus and as a seasoning for an endive salad.
