This beautiful fleur de sel des paludiers Charteau is the fruit of the warm summer’s day flirt between the sea and the Eastern winds. I recommend under-salting dishes in the kitchen in order to let your guests help themselves to the Fleur de sel whilst at the dining table. Sprinkle a few grains onto salads, vegetables, fish and meats just before serving.
Guérande fleur de sel is a result of the sublimation of sodium chloride dissolved in the sea during its crystallization. This phenomenon occurs only certain years. Several factors must come together, including the wind direction, temperature and atmospheric pressure.
