I always have a small tin in my box to add my own ‘pinch of salt’ whenever I want. I recommend reducing the salt you use when cooking and keeping fleur de sel on the table at all times so that it can be sprinkled over fish, meat, salad and vegetables as a last-minute touch.

Story

The exquisite fleur de sel gathered by the Charteau salt farmers forms when sea water is kissed by an easterly wind on a bright summer day.
Fleur de sel forms when sea water evaporates and sodium chloride crystallizes into salt. The crystallization phenomenon requires specific meteorological conditions including wind direction, temperature and atmospheric pressure, and only happens certain years. We source our salts from Lionel Charteau and he and his wife are experts in the subject.
