I came up with the idea for this fleur de sel blend on Madagascar, which Arab sailors called the Island of the Moon. The name comes from the full lunar cycle that was needed to sail the island from north to south. Fleur de Lune combines vanilla and kaffir lime, two distinctive seasonings from the South Seas.
