John François gathers kelp from the Saint-Malo coast at half-tide, after which it is wind-dried in the shade for several days. Finally, we grind it, guaranteeing that it remains in its purest state.
Sweet and iodized in taste, dulse goes well with all kinds of raw vegetables, and with shredded carrots and tomatoes in particular. It can also be used to make delicious fish sauces (half a teaspoon per person in a cream or beurre blanc sauce).
