Olivier Rœllinger's words

The flavor of this herb is astonishing because it is reminiscent several different herbs and spices. Its scent is similar to mint and lemon balm.

Story

This wild calamint from Occitania is harvested by hand during the summer months using a small sickle. Calamint both looks and smells like mint, which means it can be used to replace mint in a fruit salad recipe.
The perennial from Eastern Europe is also called ‘savory calamint’ and ‘Aubrac tea.’ Shepherds used to make a drink with dried calamint leaves, and, during the 12th century, the monks of Aubrac used the herb to make liqueur.
