The words of Olivier Roellinger

The aromatic flavor of this plant is amazing and equivalent to the combination of several herbs and spices. Its scent is similar to mint and melissa.

Story

During summer this wild calamint (Calamintha nepeta) is hand-picked in the south of France.
The calamint looks like mint. She looks and smells like it. In a fruit salad we can replace the mint with a few leaves of calamint. This perennial plant from Eastern Europe is also called "savory with large flowers" or "Aubrac tea".
Its dried leaves were used by shepherds to make a drink. The monks of Aubrac used it in the 12th century to make an alcool with herbs.
