It's a flavour that can be qualified as "English" and that we like a lot. The chutney that I produce borrows this classic combination, with sugar and salt, for small squid from the bay fried just until crisp.

The first chutneys were often made with green tomatoes as the main ingredient. The tomato, which provoked mistrust for centuries, is now associated with sweet vinegar and a few aromatics to become the basis for a condiment that the whole world consumes - often a bit too much - in the form of ketchup.

After opening, two weeks in the refrigerator.

Accompanies any vegetable starter, little shrimp fritters, steamed or fried fish. Can replace any brand of ketchup.
